An easy and tasty slice that kids actually eat!
Ingredients ½ cup gluten free oats ½ cup gluten free flour 4 tsp chia seeds ¼ tsp cinnamon I egg 1 large ripe banana (mashed) 1 apple (grated) ½ cup raisins 1 ¼ cup almond milk 1 tbsp pumpkin seeds (optional)
Makes 20 snack sized portions. 54 calories per serve.
Method Mix all ingredients in a bowl, pour into a lined or greased slice tray. Top with pumpkin seeds (optional). Bake at 180 degrees for 45 minutes.
Slice before freezing. Pop one portion in lunch box frozen, will defrost by morning tea. I can’t take credit for the original recipe. I scribbled it down many years ago and have refined it since to make it friendlier for sensitive little people. Thanks whoever you are – my kids still love this! It’s easily adapted to be nut free (just switch the milk) or if your child is ok with gluten, also delicious using spelt flour.
